What ingredients do I need?

  • Mayonnaise: The creamy base. Full-fat gives best flavor and texture.
  • Roasted Garlic: Sweet, caramelized garlic that blends smoothly into the aioli.
  • White Wine Vinegar: Adds brightness and balance.
  • Lemon Juice: Fresh acidity that lifts the richness.

Can I Substitute?

Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.

  • White wine vinegar: Apple cider vinegar can be used instead.
  • Lemon: Swap with lime juice.
  • Mayo: Substitute greek yogurt for half of the mayo for lighter version
  • Fresh herbs: Dried herbs can be used in a pinch, just use ⅓ the amount
  • Garlic: Use roasted shallots instead of garlic

Dietary Substitutions

  • Dairy free: Use dairy free mayo
  • Egg free: Use vegan mayonnaise
  • Low fat: Replace half of the mayo with Greek yogurt
  • Herb free: Skip the herbs for classic roasted garlic aioli

Leftovers and Storage

  • Store aioli in an airtight container in the refrigerator for 4–5 days.
  • Stir, or shake well, before using.
  • Not recommended for freezing.

Can I freeze aioli?
No, freezing separates the mayonnaise and completely ruins the texture.

Can I use jarred roasted garlic?
Yes, but fresh roasted garlic has a sweeter, deeper flavor and is just better in my opinion.

Why is my aioli too thin?
If this happens, you can add more mayonnaise or try chilling it longer to thicken.

Why is my aioli too thick?
If this happens, add a teaspoon of fresh lemon juice or water to loosen it a little.

Can I make aioli without a blender?
Yes, mash roasted garlic very smooth and whisk everything together by hand.

Can I make this ahead of time?

Ingredients

  • 1 cup mayonnaise
  • 2 heads roasted garlic about ¼–⅓ cup paste
  • 2 tsp white wine vinegar
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 tbsp fresh chives chopped
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh tarragon chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat oven to 400°F.
  • Cut the very top of the heads of garlic off and drizzle well with olive oil. Wrap the garlic tightly in foil, or place in a oven safe dish and cover with foil. Roast for 40–45 minutes until soft and golden. Cool and then squeeze cloves out.
  • Add mayonnaise, roasted garlic, vinegar, lemon juice, Dijon, salt, and pepper to a blender and blend until smooth.
  • Add the fresh herbs and pulse just until combined.
  • Chill at least 30 minutes before serving.
