These Mocha Crunch Moose Paws one of my absolute favorites out of all my moose paw variations. They’re creamy, chocolatey, lightly sweet, and finished with a crisp dark chocolate shell studded with crunchy cacao nibs. Plus that combination of chocolate, coffee, and peanut butter is incredibly underrated!
The center is made with creamy Greek yogurt, peanut butter, cocoa powder, espresso powder, honey, and vanilla, then frozen into little discs before being dipped in melted dark chocolate. Once the chocolate hardens, you get that ridiculously satisfying crackly chocolate shell followed by a cool, creamy mocha-peanut butter center.
They’re also no-bake, freezer-friendly, make-ahead friendly, and incredibly easy to customize. Keep a container in the freezer for an afternoon sweet treat, a little after-dinner dessert, or whenever those chocolate cravings hit
If you’ve made my original Moose Paws, this is such a fun variation to try. The creamy frozen center and dark chocolate shell are still there, but the espresso and cacao nibs give these a much more grown-up mocha flavor.

Why you’ll love this recipe!
What ingredients do I need?
- Whole Milk Plain Greek Yogurt: I recommend using whole milk Greek yogurt because it gives the frozen centers a rich, creamy texture. A thick Greek yogurt works best here rather than a thinner, regular yogurt.
- Creamy Peanut Butter: Peanut butter gives these Moose Paws that classic chocolate-peanut butter combination. Use a creamy peanut butter for the smoothest filling.
- Honey: Honey adds just the right amount of sweetness to the creamy mocha filling and helps balance the bitterness of the cocoa and espresso.
- Unsweetened Cocoa Powder: Cocoa powder brings plenty of rich chocolate flavor to the center without adding extra sweetness.
- Espresso Powder: This is what gives these Moose Paws their mocha flavor! Espresso powder also helps deepen the chocolate flavor without making the dessert taste overwhelmingly like coffee.
- Vanilla Bean Paste: Vanilla rounds out all of the flavors and adds a little extra warmth to the mocha and peanut butter filling. Vanilla extract works just as well if that’s what you have.
- Dark Chocolate: Dark chocolate creates that crisp, snappy shell around the creamy frozen center. I love the contrast between the slightly bitter dark chocolate and the sweeter peanut butter filling.
- Cacao Nibs: Cacao nibs add a delicious little crunch to the chocolate coating. They have a naturally nutty, slightly bitter flavor that pairs especially well with the dark chocolate and espresso.
- Flaky Sea Salt: Completely optional, but I highly recommend it! A little flaky salt on the finished chocolate shell makes the chocolate and mocha flavors really pop and gives you that irresistible sweet-and-salty combination.

Recipe Variations
- Try some of my other variations:
- Not an coffee fan? No worries, just leave it out for an incredibly rich chocolate peanut butter version.
- Change the nut butter: Use almond butter, cashew butter, sunflower butter, etc. Easily adapt this recipe based on dietary preferences and allergies.
- Feel free to use regular yogurt too, however this will change the amount of protein each piece has as well as the texture (would be a little thinner)
- Don’t have honey? Try using maple syrup instead.
- Use Milk Chocolate: Milk chocolate creates a sweeter, creamier shell if that’s more your style.
- Add Chopped Nuts: Replace the cacao nibs with finely chopped and lightly toasted almonds, pecans, hazelnuts, or peanuts for a different kind of crunch.
- Add Coconut: Stir a little finely shredded and lightly toasted coconut into the chocolate coating for a chocolate-coconut version.
- Make Mini Moose Paws: Use smaller portions of the yogurt mixture to make bite-sized treats. They’ll freeze faster, so start checking them earlier.
Pro Tips
- Use thick greek yogurt. The thicker the yogurt, the better the texture. A thick whole-milk Greek yogurt gives you the creamiest center.
- Freeze until completely firm before dipping in chocolate. Don’t rush the freezing step. If the centers are still soft when you try to dip them, they’ll be much harder to coat and may start falling apart in the chocolate.
- Work in batches, This is probably my biggest tip. Keep the majority of the frozen centers in the freezer while you work with a few at a time. The longer they sit at room temperature, the softer they’ll become.
- Keep the chocolate smooth. Melt the chocolate gently and stir frequently. If your chocolate is particularly thick, a small amount of coconut oil can help loosen it and create a smoother coating.
- Chop/grind the cacao nibs finely. I do this step in a good blender. Large cacao nibs can make the chocolate harder to work with. Finely chopped nibs give you crunch throughout the shell without making the coating difficult to dip.
- Don’t skip the flaky sea salt. If you like salty-sweet desserts, this is one of those tiny finishing touches that makes a surprisingly big difference.
- Let them sit out a little before enjoying. Straight from the freezer, the centers will be very firm. Let a Moose Paw sit at room temperature for about 5–10 minutes before eating. The center softens slightly and becomes much creamier.
- Use parchment paper or a silicone mat. Place the dipped Moose Paws on parchment paper or a silicone baking mat so the chocolate doesn’t stick to the pan.
- Not sure how to melt chocolate? Use my How To Melt Chocolate guide.
Can I Substitute?
Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.
- Peanut Butter: Swap with any other nut butter or sunflower butter (for a nut free option).
- Greek Yogurt: Coconut, soy, or almond yogurts would work for a dairy free option. Just avoid runny yogurts, which would change the texture, or if you have to use these other options you can try freezing them in molds before dipping so that they do not spread too much.
- Honey: Just omit completely, or use maple syrup or agave.
- Espresso Powder: Just omit if you aren’t a coffee fan or can’t find it. You can also use instant coffee or finely ground coffee in a pinch, just reduce the amount slightly if using stronger coffee.
- Cacao Nibs:Use chopped nuts (almonds, pecans, or hazelnuts) or granola for a different crunch texture.
Dietary Substitutions
- Dairy-Free: Use a thick dairy-free yogurt and dairy-free dark chocolate. Coconut, almond, or soy yogurt can work, but choose one with a thick consistency so the frozen centers hold their shape.
- Nut-Free: Replace the peanut butter with sunflower seed butter and make sure your chocolate and other ingredients are produced in a way that works for your specific allergy needs.
- Gluten-Free: The ingredients used in this recipe are naturally gluten-free, but always check individual labels if you need to avoid gluten because manufacturing practices can vary.
- Refined-Sugar-Free: If you want to make a version without refined sugar, you’ll need to choose your chocolate carefully. Most conventional dark and semi-sweet chocolates contain added sugar, so use a chocolate sweetened with an ingredient that fits your dietary needs.
Leftovers and Storage
- Freezer: Store Mocha Crunch Moose Paws in an airtight, freezer-safe container. I also recommend placing parchment paper between layers if you’re stacking them to prevent them from sticking together. They are best enjoyed within about 1 month for the best texture and flavor.
- Keep them frozen rather than refrigerated. When you’re ready for one, take it out of the freezer and let it sit at room temperature for approximately 5–10 minutes. This gives the frozen center a chance to soften slightly while keeping that delicious chocolate shell intact.

But, I Still Have A Few Questions…
Do I have to use Greek yogurt?
Greek yogurt works best because it’s thick and gives the frozen center a creamy texture. A thick dairy-free yogurt can also work if you need a dairy-free option. Avoid thin or runny yogurt because it can make the centers softer and icier.
Can I leave out the espresso powder?
Absolutely! If you’re not a coffee fan, simply leave it out. You’ll have a deliciously rich and creamy chocolate peanut butter Moose Paw instead.
Can I use instant coffee instead of espresso powder?
Yes. Instant coffee powder can work in a pinch. Because the strength varies between brands, start with a little less and adjust to taste.
What kind of chocolate should I use?
I prefer dark chocolate because it balances the sweetness of the filling, but semi-sweet or milk chocolate will also work. Milk chocolate will make the finished treats sweeter.
Why are my Moose Paws difficult to dip?
The centers probably aren’t frozen enough, or they’ve been sitting out too long while you’re dipping. They should be completely firm before dipping. If they start getting soft, put them back in the freezer for a few minutes.
Why is my chocolate coating too thick?
Some chocolate melts much thicker than others. If needed, stir a small amount of coconut oil into the melted chocolate to loosen it and make dipping easier.
Can I make these without cacao nibs?
Yes! You can leave them out completely or replace them with finely chopped nuts or cocnut for a different crunchy texture.
Can I use a different nut butter?
Yes. Almond butter, cashew butter, and sunflower seed butter are all good options. Keep in mind that different nut and seed butters vary in consistency, which can slightly change the texture of the frozen center.
Can I make these dairy-free?
Yes. Use a thick dairy-free yogurt and dairy-free dark chocolate.
Can I make these nut-free?
Yes. Replace the peanut butter with sunflower seed butter and make sure all other ingredients meet your allergy requirements.
Can I double the recipe?
Yes! This recipe doubles easily. I recommend working in batches when dipping so the frozen centers stay cold and firm.
How long do the Moose Paws need to freeze?
The initial freezing time is about 1 hour, but the exact time will depend on the thickness of your discs and how cold your freezer runs. The important thing is that they are completely firm before dipping.
How long do Mocha Crunch Moose Paws last in the freezer?
For the best texture and flavor, I recommend enjoying them within about 1 month when stored properly in an airtight, freezer-safe container.
Do I need to thaw them before eating?
No. In fact, you don’t want them fully thawed. Let one sit at room temperature for about 5–10 minutes so the center softens slightly while the chocolate shell stays firm.
Can I keep these in the refrigerator instead?
I don’t recommend it. The frozen center will become too soft, and you lose the texture that makes these Moose Paws so good. Keep them frozen and let them sit out briefly before enjoying.
Are these a healthy dessert?
I don’t really think every dessert needs a health label. These are made with ingredients like Greek yogurt, peanut butter, cocoa, and dark chocolate, but they’re also a chocolate-covered frozen treat, and that’s exactly what I want them to be. Enjoy them because they’re delicious, not because you need to earn or justify dessert.
How do I keep the chocolate shell smooth?
If the chocolate is too thick, add a teaspoon of coconut oil to help it melt smoothly and create a glossy finish. You can check out my guide for melting chocolate here.
Can I make these smaller?
Yes! Use a 1 to 1½ tablespoon cookie scoop to make perfect mini bites!

I’m a P.A and can’t wait to try these!!!
Can you omit any of the butters if you don’t like any kind of nut butter or do you need it for the texture?
Hello! It does need it for texture. Otherwise you get that icey, frozen yogurt texture. You can try sunflower butter! Or you can try cutting the butter in half. But it needs a little.
These are amazing!! I used sweetened condensed milk as the sweetener instead of honey since I know it does not freeze and I did not want them to be hard and icy. The filling turned out the perfect consistency! Not icy at all!
Thank you so much. I love the substitution!! Sounds delicious!
The same amount?
Hello! This isn’t part of my original recipe so I unfortunately do not have an answer for you.
I love your nutritional disclaimer! Makes perfect sense and I always believe that everything in moderation is a great way to do life!
I’m so glad this resonated with you. I am a firm believer in this!! <3
This looks so good! What a great combination of flavors!
Thank you so much! I can’t wait to know what you think!
Thanks for sharing! Does it keep
Long?
I hope you love it! They should keep for about 1 month when stored in an airtight freezer safe container. 🙂
Do you think this would work with a sugar free “maple” syrup?
Hi! I haven’t tried it with a sugar free option. However, if it behaves similar to maple syrup then I think it would work well!
