But, I Still Have A Few Questions…

How do I get rid of excess water from zucchini so the galette isn’t soggy?
Zucchini naturally contains a lot of water, which can make your galette soggy if not removed. The best way to handle this is to salt the sliced zucchini and let it sit for 5–10 minutes. The salt will draw out moisture. Afterward, wrap the zucchini slices in a clean kitchen towel or cheesecloth and gently squeeze to remove the excess liquid. Once drained, the zucchini is ready to layer in your galette, keeping the crust crisp and the filling perfectly tender.

Can I make mini galettes?
Yes! Use small rounds of dough and adjust baking time to 20–25 minutes.

Can I use a different cheese?
Absolutely — Gruyère is rich and melty, but Fontina, Havarti, or mozzarella are great alternatives.

Summer Zucchini Galette

This Summer Zucchini Galette is a cozy, rustic tart featuring caramelized onions, thinly sliced zucchini, fresh thyme, and melty Gruyère cheese wrapped in buttery pie dough. Perfect for brunch, lunch, or a light dinner, it’s simple to make, customizable, and full of warm, comforting flavor.

Ingredients

  • 1 pie dough unbaked, rolled out to about 1/4” thick
  • 1 medium sweet onion sliced very thin
  • 1 tbsp unsalted butter
  • 1 medium zucchini sliced very thin
  • Fresh thyme
  • 6 oz gruyere shredded
  • Salt and pepper
  • 1 egg whisked
  • Everything seasoning optional

Instructions

  • In a small sauté pan over low-medium heat, add butter and onions. Cook until golden brown and caramelized, stirring occasionally. This takes about 15-20 minutes. Set aside to cool.
  • Slice zucchini as thin as possible and then place in a towel lined bowl. Sprinkle with a little salt, set aside, and let sit for 10 minutes.
  • Preheat oven to 400F and then assemble the galette.
  • Place unbaked pie dough on a parchment lined baking sheet. Sprinkle the dough with half of the cheese (leaving about 1 inch along the edges), then the caramelized onions and a little fresh thyme. Wrap the zucchini up in the towel and squeeze as much liquid out as possible and then arrange them on top of the onions. Sprinkle on the rest of the cheese.
  • Fold the edges over the sides and brush with the egg.
  • If desired, sprinkle with a little everything seasoning to finish.
  • Bake for 28-30 minutes until edges are browned. Top with a little more fresh thyme and cool for 10 minutes. Cut and enjoy!
