White Chocolate Cranberry Bliss Oat Bites

Ingredients

  • 3/4 c. Honey
  • 1/4 c. Peanut butter creamy
  • 2 tbsp coconut oil
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 tsp fresh orange zest
  • 2 c. Old fashioned oats
  • 3/4 c. Dried cranberries
  • 1/3 c. Sunflower seeds
  • 1/3 c. Pumpkin seeds
  • 1/2 c. Almonds ground (or very chopped fine)
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • Pinch salt
  • 3/4 c. White chocolate chips
  • Flaky sea salt

Instructions

  • In a large bowl, add oats, cranberries, seeds, ground almonds, cinnamon and salt. Stir to combine and then set aside.
  • Add honey, peanut butter, coconut oil, orange zest, and vanilla bean paste to a small pot over medium low heat. Stir and heat until combined well. Pour over oat mixture. Stir and combine well.
  • Fold in white chocolate chips
  • Add oat mix to a parchment lined 8x8” baking pan, spread evenly, and then press down firmly. Add a few more chocolate chips and flaky sea salt on top. Then refrigerate for at least 1 hour until set.
  • Divide into 36 squares and enjoy!
