Ingredients

  • 16 oz cottage cheese whole milk
  • ¾ cup creamy peanut butter
  • 1 tablespoon honey
  • Pinch of salt
  • 2 tablespoons heavy cream
  • 15 oz dark chocolate melted
  • 6 tablespoons cacao nibs finely ground (optional)

Instructions

  • Add cottage cheese, peanut butter, honey, salt, and heavy cream to a food processor or blender. Blend until completely smooth and creamy.
  • Pour mixture into ice cream molds and insert popsicle sticks.
  • Freeze until solid, at least 4 hours or overnight.
  • Mix melted chocolate and finely ground cacao nibs together and pour into a tall glass.
  • Remove ice cream bars from molds and dip each bar quickly into the chocolate mixture, shaking off excess.
  • Place bars on a parchment- or silicone-lined baking sheet and return to the freezer until chocolate is set.
