Dark Chocolate Cherry Oat Bites

These No Bake Dark Chocolate Cherry Oat Bites are chewy, chocolatey, and naturally sweetened with honey — a nourishing, gluten-free snack that’s perfect for meal prep, gifting, or whenever you need something quick and wholesome.

Ingredients

  • 3/4 c. Honey
  • 1/4 c. Peanut butter creamy
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 2 c. Old fashioned oats
  • 3/4 c. Dried cherries
  • 1/3 c. Sunflower seeds
  • 1/3 c. Pumpkin seeds
  • 1/2 c. Almonds ground (or finely chopped)
  • 1 tsp cinnamon
  • Pinch salt
  • 3/4 c. Dark chocolate chips

Instructions

  • In a large bowl, add oats, cherries, seeds, ground almonds, cinnamon and salt. Stir to combine and then set aside.
  • Add honey, peanut butter, coconut oil, and vanilla extract to a small pot over med low heat. Stir and heat until combined well. Pour over oat mix. Stir and mix well.
  • Fold in chocolate chips
  • Add oat mix to a parchment lined 8x8” baking pan, spread evenly, and then press down firmly. Refrigerate for at least 1 hour until set.
  • Divide into 36 squares and enjoy.
