Preheat oven to 375F and line a baking sheet with parchment paper.
Roll out pastry on a lightly floured surface. Add a layer of cookie dough. Roll up. Cut into 8 pieces.
Lay flat on a parchment lined baking sheet. Top with a little more cookie dough if you’d like (about 2 tsp).
Brush with whisked egg.
Bake for 25 minutes. If getting too dark on top, place a layer of foil on top to prevent from burning about halfway through.
Remove from oven and sprinkle with flaky sea salt. Cool 5 minutes before diving in.
