Pro Tips

  • Don’t skip toasting the pistachios. This quick and easy step helps to develop a deeper, richer nutty flavor that makes all the difference.
  • Toast over medium-low heat. Pistachios can burn quickly, so stir frequently and remove them as soon as they become fragrant.
  • Allow plenty of steeping time. The longer the pistachios steep (20–30 minutes), the more flavorful your syrup will be.

Can I Substitute?

Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.

  • Flaky sea salt: Regular kosher salt may be substituted for flaky sea salt; just use slightly less.
  • Unsalted raw pistachios: Unsalted roasted pistachios can be used if you’re short on time, though freshly toasted raw pistachios produce the best flavor.

Dietary Substitutions

  • Dairy-Free: This recipe is naturally dairy-free.
  • Gluten-Free: All ingredients are naturally gluten-free. Be sure to use certified gluten-free ingredients if needed.
  • Vegan: Replace the honey with maple syrup or agave nectar.

Leftovers and Storage

  • Refrigerator: Allow the syrup to cool completely before transferring it to an airtight glass bottle or jar. Store it in the refrigerator for up to 2 weeks. Because this syrup is made with real pistachios and honey and doesn’t contain preservatives, keeping it chilled is important for freshness.

But, I Still Have A Few Questions…

Can I use roasted pistachios instead of raw?
Yes. Unsalted roasted pistachios work well if that’s what you have on hand. Since they’re already roasted, simply warm them for a minute or two before adding the remaining ingredients to help release their oils and flavor.

Why should I toast the pistachios?
Toasting enhances their natural oils and creates a richer, deeper flavor. It’s a small step, but it makes a big difference.

Can I make this syrup less sweet?
The sugar and honey help preserve the syrup and give it the classic coffee syrup consistency. Reducing the sweeteners too much may shorten its shelf life and produce a thinner syrup.

Can I use this outside of coffee?
Absolutely! Try it in homemade lattes, cold brew, matcha, tea, Italian sodas, milkshakes, cocktails, mocktails, oatmeal, yogurt, pancakes, waffles, French toast, or drizzled over vanilla ice cream.

Can I freeze this syrup?
Technically yes, however I have never done it. If you want to freeze it, put it in small airtight containers or silicone ice cube trays for up to 3 months. Thaw overnight in the refrigerator and shake well before using.

Do I have to strain the syrup?
Yes. Straining removes the pistachio pieces and creates a smooth syrup that’s perfect for stirring into drinks.

Why is my syrup cloudy?
A slight cloudiness is completely normal because the toasted pistachios release natural oils into the syrup. This doesn’t affect the flavor or quality.

Can I double the recipe?
Yes! This recipe doubles easily if you’d like to make extra for gifting or meal prep.

What coffee drinks pair best with this syrup?
It’s delicious in hot lattes, iced lattes, cold brew, cappuccinos, iced Americanos, shaken espresso drinks, and even homemade pistachio matcha lattes.

Instructions

  • Add the water, granulated sugar, honey, and flaky sea salt.
  • Bring the mixture to a gentle simmer, stirring until the sugar has completely dissolved.
  • Simmer for 5–6 minutes.
  • Remove the saucepan from the heat and allow the pistachios to steep in the syrup for 20–30 minutes.
  • Strain the syrup through a fine mesh sieve into a heat-safe measuring cup or bowl, pressing gently on the pistachios to extract as much syrup as possible.
  • Let the syrup cool completely before transferring it to a clean glass bottle or jar.
  • Refrigerate until ready to use.
