If you’re looking for a healthier treat that still feels indulgent, then get ready for these Toasted Coconut Date Bars to rock your world! Made with naturally sweet Medjool dates, toasted coconut, almond flour, and rich dark chocolate, these no bake bars are chewy, chocolatey, and packed with incredible coconut flavor.
The dates create a soft, caramel-like filling without needing to add any refined sugar, while toasted coconut adds rich, nutty flavor and the perfect amount of texture. Finished with a layer of dark chocolate and a sprinkle of flaky sea salt, every bite tastes like a homemade candy bar made with simple, real ingredients.
These bars have quickly become a favorite in our house because they’re loved by both the kids and adults. They’re perfect for lunchboxes, afternoon snacks, road trips, or an easy dessert after dinner. Since they’re completely no bake, they’re especially great during the warmer months when you don’t want to turn on the oven.
One of my favorite things about this recipe is how easy it is to customize. Add chopped nuts, drizzle with peanut butter, or use your favorite kind of chocolate. Once you make a batch, you’ll quickly see why they disappear so fast.

What ingredients do I need?
- Coconut Date Layer
- Toasted Unsweetened Shredded Coconut: Toasting half of the coconut brings out its natural oils and adds a rich, nutty flavor that makes these bars taste even more indulgent. It’s a simple step that adds incredible depth.
- Unsweetened Shredded Coconut: The remaining untoasted coconut adds texture, chewiness, and plenty of coconut flavor while helping create the perfect consistency for the filling.
- Almond Flour: Almond flour helps bind the filling together while adding healthy fats, a subtle nutty flavor, and a soft, chewy texture. It also keeps these bars naturally gluten-free.
- Medjool Dates: Naturally sweet with a rich caramel-like flavor, Medjool dates create the soft, chewy filling that holds these bars together. Their naturally sticky texture makes them the best choice for this recipe, and they eliminate the need for refined sugar in the filling.
- Coconut Cream, or Full-Fat Canned Coconut Milk: A small amount of coconut cream adds moisture and helps the ingredients blend into a smooth, cohesive mixture. It also enhances the coconut flavor without making the bars overly wet.
- Vanilla Bean Paste, or Vanilla Extract: Vanilla rounds out the flavors and enhances the natural sweetness of the dates. Vanilla bean paste adds beautiful flecks of vanilla and a slightly richer flavor, but pure vanilla extract works just as well.
- Kosher Salt: A little salt balances the sweetness of the dates and chocolate while bringing out all of the other flavors. Don’t skip it, it really makes a big difference.
- Chocolate Topping
- Dark Chocolate: Dark chocolate creates a rich, decadent topping that perfectly balances the sweetness of the dates and coconut. I recommend using a good-quality chocolate that you enjoy eating on its own for the best flavor.
- Coconut Oil: Just a little coconut oil helps the chocolate melt smoothly and creates a glossy topping that slices more cleanly once chilled.
- Flaky Sea Salt: A sprinkle of flaky sea salt adds the perfect finishing touch. It enhances the chocolate, balances the sweetness, and gives every bite a little pop of flavor and texture.

Recipe Variations
- Nutty Version: Sprinkle the tops with toasted sliced almonds.
- Citrus Forward: Add orange zest to the coconut date layer for a chocolate-orange twist.
- Super Nutrient Packed: Mix some hemp hearts, or chia seeds, into the filling into the filling as well.
Pro Tips
- Toasting half of the coconut makes a huge difference in flavor, I don’t recommend skipping this step unless you are really short on time.
- Use soft, fresh Medjool dates for the smoothest filling. If your dates feel dry, soak them in hot water for 10 minutes before blending.
- Press the mixture firmly into the pan using the bottom of a measuring cup for clean, even layers.
- Let the bars sit at room temperature for 5–10 minutes before slicing to prevent the chocolate from cracking.
- Use a sharp knife, wiping it clean between cuts for clean cuts.
- Sprinkle the flaky sea salt while the chocolate is still a little melted so it adheres well.

Can I Substitute?
Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.
- Almond Flour: Substitute oat flour if needed (the texture will be slightly softer).
- Dark Chocolate: Use semi-sweet chocolate instead of dark chocolate for a sweeter bar.
- Coconut Cream: Coconut milk may be used in place of coconut cream if needed, just opt for the full fat version.
- Vanilla Bean Paste: Vanilla extract works perfectly if you don’t have vanilla bean paste.
Dietary Substitutions
- Gluten-Free: Naturally gluten-free.
- Dairy-Free: Use dairy-free dark chocolate.
- Refined Sugar-Free: Choose dark chocolate without refined sugar if desired.
- Vegan: Use dairy-free chocolate.
- Nut-Free: Substitute the almond flour with oat flour.

Leftovers and Storage
- Refrigerator: Store the bars in an airtight container in the refrigerator for up to 1 week.
- Freezer: Freeze in a freezer-safe container with parchment between the layers for up to 3 months.
- Serving: For the cleanest slices, let the bars sit at room temperature for 5–10 minutes before slicing.
Troubleshooting
My date mixture is too dry. What should I do?
Add a little more coconut cream, about 1 teaspoon at a time, until the mixture easily presses together.
My filling is too sticky. How can I fix this?
Add another tablespoon or two of almond flour and pulse again until it becomes easier to handle.
Why won’t my dates blend smoothly?
Your dates may be dry. Dry dates usually need soaking, so place them in hot water for about 10 minutes, drain well, then blend again.
My chocolate cracked while slicing.
Allow the bars to sit at room temperature for 5–10 minutes before cutting. This softens the chocolate slightly for cleaner slices.
My bars are falling apart.
Either the filling was too dry, or it wasn’t pressed firmly enough into the pan before chilling. Compacting the mixture helps it hold together.
Can I skip toasting the coconut?
Yes, but the toasted coconut adds a much deeper, richer flavor that really makes these bars stand out.

But, I Still Have A Few Questions…
Are these date bars healthy?
These bars are made with wholesome, nutrient dense ingredients like Medjool dates, almond flour, coconut, and dark chocolate. While they still feel like a dessert, they’re naturally sweetened and made without refined sugar in the filling.
Why should I use Medjool dates?
Medjool dates are naturally soft, sticky, and have a rich caramel-like flavor that creates the perfect texture for these bars. They blend much more smoothly than other varieties of dates and help bind the filling together without needing additional sweeteners.
What if my Medjool dates are too hard?
If your dates feel dry or firm, simply place them in a bowl of hot water for about 10 minutes to soften. Drain them well before adding them to the food processor. This helps them blend into a smooth, creamy filling without adding extra moisture to the recipe.
Do I have to toast the coconut?
No, but it adds incredible flavor and makes these bars taste much richer.
Can I make these ahead of time?
Absolutely! They’re perfect for meal prep and actually taste even better after chilling overnight.
Can I freeze these bars?
Yes! Freeze them in an airtight container for up to 3 months. Thaw in the refrigerator before serving.
Do these need to stay refrigerated?
Yes. They hold their shape best when stored in the refrigerator. Plus the chocolate layer won’t melt as quickly while eating (which can get a little messy, especially with kids).
Can I make these nut-free?
Almond flour provides structure, so substitutions will slightly change the texture. I would recommend trying them with oat flour.
Can I use milk chocolate?
Absolutely! Dark chocolate balances the sweetness nicely and reduces the sugar content a little, but milk chocolate works if you prefer a sweeter dessert.
Why are my bars crumbly?
The mixture likely needed a little more coconut cream, or wasn’t pressed firmly enough into the pan.
Can kids help make these?
Yes! Kids love helping press the mixture into the pan and sprinkling on the flaky sea salt.
