If you love a good chicken Caesar salad AND a cheesy, golden-brown calzone, I have a feeling you’re going to love these Chicken Caesar Salad Mini Calzones. Because why choose between the two when you can combine them into one delicious meal?

These homemade mini calzones are stuffed with tender chicken, crispy bacon, plenty of melty mozzarella, freshly grated Parmesan, and creamy Cardini’s Caesar Dressing (or whatever creamy caesar you love!). Everything gets tucked inside soft pizza dough, folded into little half-moons, and brushed with egg wash before being sprinkled with garlic, oregano, sesame seeds, and even more Parmesan. They bake until beautifully golden and slightly crisp on the outside, with a warm, cheesy, savory filling inside.

And because I couldn’t just stop at the calzones, I love serving them with a simple, crunchy Caesar salad and an optional Hot Honey Caesar Dip. The dip is creamy, tangy, a little sweet, and has just enough heat to make you want to go back for another dunk. It’s one of those sauces that you might find yourself making for all sorts of things beyond these calzones.

They’re perfect for an easy family dinner, game day, casual entertaining, or whenever you’re craving something a little more exciting than your usual pizza night. And the best part? Using prepared pizza dough and cooked chicken keeps the whole recipe surprisingly simple.

Why you’ll love this recipe!

  • Two favorites in one: All the flavors of a classic chicken Caesar salad tucked inside a warm, cheesy homemade calzone
  • Golden, seasoned crust
  • Packed with so much flavor
  • Easy to make
  • Perfect for entertaining
  • Optional Hot Honey Caesar Dip recipe to serve alongside
  • Family-friendly

What Are Chicken Caesar Salad Mini Calzones?

A calzone is a folded pizza dough pocket traditionally filled with cheese, meats, vegetables, or other savory ingredients and baked until golden brown.

These Chicken Caesar Salad Mini Calzones though take inspiration from a classic chicken Caesar salad (my fav!) and turn those familiar flavors into a warm, cheesy handheld meal.

Instead of traditional pizza sauce, the filling gets its flavor from creamy Caesar dressing, which pairs really well with the chicken, crispy bacon, mozzarella, and Parmesan.

The romaine lettuce and croutons are served separately as a fresh Caesar salad, rather than baked inside the calzones. This keeps the lettuce crisp and gives you that delicious contrast between the warm, cheesy calzones and the cool, crunchy salad.

And if you really want to take things up a notch, the optional Hot Honey Caesar Dip adds a little sweetness, tang, and gentle heat that works so well with the savory filling.

What ingredients do I need?

  • For the Chicken Caesar Filling
    • Pizza Dough: Prepared pizza dough makes this recipe easy and convenient. You’ll need 1 pound, divided into four equal portions. Homemade pizza dough works beautifully, too.
    • Cooked Chicken Breast: Tender, chopped chicken breast makes up the main protein in the filling. This is a great recipe for using leftover chicken or rotisserie chicken.
    • Low-Moisture Whole-Milk Mozzarella: Melts beautifully and creates that irresistible cheesy filling without adding too much excess moisture.
    • Freshly Grated Parmesan Cheese: Adds a salty, nutty flavor that complements the Caesar dressing and chicken.
    • Bacon: Crispy, crumbled bacon adds smoky, savory flavor and a little crunch to every bite.
    • Cardini’s Caesar Dressing (or another favorite): Brings the classic Caesar flavor to the filling, with its creamy, savory, tangy notes. It also helps keep the chicken flavorful without needing a separate sauce.
  • For the Seasoned Crust
    • Egg: A beaten egg creates a beautiful golden, glossy finish and helps the seasonings adhere to the dough.
    • Garlic Powder: Adds savory garlic flavor to the crust.
    • Onion Powder: Complements the garlic and adds a little extra depth.
    • Dried Oregano: Gives the crust a classic Italian-inspired flavor.
    • Sesame Seeds: Add a subtle nutty flavor and a little texture.
    • Parmesan Cheese: Creates a deliciously savory, cheesy finish as the calzones bake.
  • For the Caesar Salad
    • Romaine Lettuce: Crisp, refreshing romaine provides a fresh contrast to the warm calzones.
    • Caesar Dressing: Coats the lettuce with creamy, tangy Caesar flavor.
    • Parmesan Cheese: Adds a salty, nutty finish.
    • Croutons: Bring the crunch that every good Caesar salad needs.
  • For the Optional Hot Honey Caesar Dip
    • Sour Cream: Creates a thick, creamy base with a little tang.
    • Caesar Dressing: Adds savory Caesar flavor and ties the dip into the calzones.
    • Hot Honey: Adds a touch of sweetness followed by gentle heat. You can adjust the amount depending on your preference.
    • Fresh Lemon Juice: Brightens the dip and balances the richness.
    • Parmesan Cheese: Adds another layer of salty, savory flavor.
    • Kosher Salt and Black Pepper: Help bring all the flavors together. Taste before adding salt, since the dressing and Parmesan are already seasoned.

Recipe Variations

  • Buffalo Chicken Caesar Calzones: Toss the cooked chicken with a small amount of buffalo sauce before assembling. Serve with the Hot Honey Caesar Dip for a delicious sweet-and-spicy combination.
  • Chicken Bacon Ranch Calzones: Replace the Caesar dressing with ranch dressing and keep the chicken, bacon, mozzarella, and Parmesan for a fun variation on the original.
  • Spinach and Chicken Caesar Calzones: Add a small amount of cooked, thoroughly drained spinach to the filling for an extra serving of vegetables.
  • Extra Cheesy Chicken Caesar Calzones: Add shredded provolone or fontina alongside the mozzarella for an even cheesier filling.
  • Garlic Parmesan Calzones: Brush the baked calzones with a little melted garlic butter immediately after removing them from the oven. Finish with additional Parmesan and chopped parsley.
  • Spicy Chicken Caesar Calzones: Add crushed red pepper flakes or finely chopped pickled jalapeños to the filling for a little extra heat.
  • Bacon-Free Chicken Caesar Calzones: Simply omit the bacon and add a little extra chicken or mozzarella. You’ll still have plenty of flavor from the Parmesan and Caesar dressing.

Pro Tips

  • Use room-temperature pizza dough. Cold dough tends to spring back when rolled. Allow refrigerated dough to sit at room temperature for approximately 30–60 minutes, or according to the package directions, until relaxed and easy to stretch.
  • Don’t overfill the calzones. It’s tempting to pack in as much filling as possible, but too much filling makes them difficult to seal and can cause them to burst during baking.
  • Use low-moisture mozzarella. Fresh mozzarella contains more moisture and can create a watery filling. Low-moisture whole-milk mozzarella melts beautifully while keeping the calzones from becoming soggy.
  • Chop the chicken into small pieces. Smaller pieces distribute more evenly and make the calzones easier to fold, seal, and eat.
  • Cook the bacon until crispy. Crispy bacon adds the best texture and prevents the filling from becoming greasy.
  • Keep the dressing measured. Caesar dressing adds plenty of flavor, but too much can make the filling wet and cause leaks. Stick with approximately 1 tablespoon per calzone.
  • Seal the edges firmly. Press the dough together and crimp with a fork or fold the edges over to create a secure seal.
  • Don’t forget to cut the steam vents. Cutting two or three small slits in the top of each calzone allows steam to escape and helps prevent the dough from splitting.
  • Preheat your oven thoroughly. A hot oven helps the dough develop a golden crust while heating the filling quickly.
  • Let the calzones rest before serving. Five minutes allows the melted cheese to settle slightly and makes them easier to handle.
  • Dress the salad just before serving. Romaine can become soggy if tossed with dressing too far in advance. Keep the lettuce, dressing, and croutons separate until you’re ready to eat.
  • Make the dip ahead of time. The Hot Honey Caesar Dip can be prepared in advance and refrigerated until serving. Give it a quick stir before using.

Can I Substitute?

Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.

  • Pizza Dough: Homemade pizza dough can be used instead of store-bought. Just make sure the dough is soft and pliable enough to roll into individual circles.
  • Chicken Breast: Cooked chicken thighs or shredded rotisserie chicken work just as well. Be sure to chop or shred the chicken into small pieces so the filling is easy to distribute.
  • Mozzarella Cheese: Provolone, fontina, or an Italian cheese blend can be substituted for mozzarella. Choose a cheese that melts well, and avoid overly wet varieties.
  • Parmesan Cheese: Pecorino Romano is a good alternative if you prefer a slightly sharper, saltier flavor.
  • Bacon: Turkey bacon can be used in place of traditional bacon. You can also omit the bacon entirely if preferred.
  • Caesar Dressing: Another creamy Caesar dressing can be used if Cardini’s isn’t available, although the flavor may vary depending on the brand.
  • Sour Cream in the Dip: Plain Greek yogurt can be substituted for sour cream for a tangier dipping sauce. Full-fat Greek yogurt will provide the creamiest consistency.
  • Hot Honey: If you don’t have hot honey, combine regular honey with a small pinch of crushed red pepper flakes or a few drops of your favorite hot sauce. Adjust to taste.
  • Sesame Seeds: These can be omitted from the crust topping if preferred.

Dietary Substitutions

  • Gluten-Free: Use a gluten-free pizza dough suitable for rolling and folding. Check that your Caesar dressing, croutons, and other packaged ingredients are gluten-free. Gluten-free dough may require a different baking time and can be more delicate to work with.
  • Egg-Free: Skip the egg wash and lightly brush the tops of the calzones with olive oil instead. Make sure the pizza dough and dressing are also egg-free if needed.
  • Nut-Free: This recipe doesn’t call for nuts, but check the labels on prepared pizza dough, Caesar dressing, and other packaged ingredients if you’re preparing it for someone with a nut allergy.

Leftovers and Storage

  • Refrigerator: Allow leftover calzones to cool, then store in an airtight container in the refrigerator for up to 3–4 days. Keep the Caesar salad and dipping sauce in separate containers.
  • Freezer: Wrap fully baked, cooled calzones individually in plastic wrap or foil and place in a freezer-safe container or bag. Freeze for up to 2 months.
    • Reheating in the Oven: Preheat the oven to 350°F and place the calzones on a baking sheet. Heat for approximately 10–15 minutes, or until warmed through.
    • Reheating from Frozen: Place frozen, fully baked calzones in a 350°F oven and heat until warmed through, approximately 20–30 minutes depending on their size.
  • Caesar Salad Storage: Store undressed romaine in an airtight container in the refrigerator for approximately 2–3 days. Keep the dressing, Parmesan, and croutons separate until serving.
  • Hot Honey Caesar Dip Storage: Store the dip in an airtight container in the refrigerator for up to 3–4 days. Stir before serving and do not freeze, as the dairy-based ingredients may separate when thawed.

Troubleshooting

My pizza dough keeps shrinking when I roll it out
The gluten in the dough may be too tight, especially if the dough is cold. Let it rest at room temperature for another 10–15 minutes, then try rolling again. Avoid forcing the dough though, which can cause tearing.

My calzones are leaking cheese or filling
This usually happens when the calzones are overfilled or the edges aren’t sealed tightly enough. Leave a ½-inch border around the filling, press the dough together firmly, and crimp the edges. Keep dressing away from the seams so the dough can seal properly.

The bottoms of my calzones are soggy
Excess moisture from the filling or an insufficiently heated baking surface can cause soggy bottoms. Use low-moisture mozzarella, avoid adding too much dressing, and make sure the oven is fully preheated. Baking on a preheated pizza stone can help create a crispier bottom.

My calzones are golden outside but doughy inside
The dough may have been rolled too thick, the calzones may be overfilled, or the oven may be running hot. Roll the dough evenly, avoid overstuffing, and continue baking until the dough is fully cooked and the filling is hot.

My calzones burst open while baking
This can happen when steam builds up inside or the seams aren’t secure. Make sure to cut steam vents into the top and seal the edges well before baking.

The filling tastes too salty
Caesar dressing, bacon, mozzarella, and Parmesan all contribute salt. Avoid adding additional salt to the filling before tasting the individual ingredients. Use freshly grated Parmesan and measure the dressing carefully.

My crust isn’t browning evenly
Make sure the egg wash covers the exposed dough evenly. Rotate the baking sheet halfway through baking if your oven has hot spots.

My Caesar salad becomes soggy
The lettuce may have been dressed too early. Toss the romaine with Caesar dressing immediately before serving, and add the croutons last to preserve their crunch.

My Hot Honey Caesar Dip is too thick
Whisk in a small amount of additional Caesar dressing or lemon juice until it reaches your preferred consistency.

My Hot Honey Caesar Dip is too spicy
Add a little more sour cream to mellow the heat. You can also add a small amount of regular honey to increase sweetness without adding additional spice.

But, I Still Have A Few Questions…

What is the difference between a calzone and a pizza?
A calzone is made by folding pizza dough over a filling and sealing the edges before baking. Unlike a traditional pizza, the cheese and other ingredients are enclosed inside the dough, creating a warm, handheld pocket.

What do Chicken Caesar Salad Mini Calzones taste like?
They have all the familiar flavors of chicken Caesar salad combined with a cheesy, golden pizza crust. The filling is creamy, savory, and slightly tangy, with smoky bacon, tender chicken, and plenty of melted cheese.

Can I use store-bought pizza dough?
Absolutely! Store-bought pizza dough makes this recipe quick and convenient. Let refrigerated dough come closer to room temperature before rolling so it’s easier to work with.

Can I use rotisserie chicken?
Yes! Rotisserie chicken is one of the easiest shortcuts for this recipe. Remove the skin and bones, then chop or shred the meat into small pieces before filling the calzones.

Does the chicken need to be cooked before adding it to the calzones?
Yes. Use fully cooked chicken. The baking time is intended to cook the pizza dough and heat the filling only.

Can I put romaine lettuce inside the calzones?
I recommend serving the romaine separately. Lettuce releases moisture and wilts when heated, so keeping it outside the calzones preserves the fresh, crunchy texture of a Caesar salad.

Can I make these calzones without bacon?
Yes. Simply omit the bacon or replace it with additional chicken or cheese.

Can I use fresh mozzarella?
You can, but low-moisture mozzarella is preferable because it releases less water during baking. If using fresh mozzarella, drain and pat it thoroughly dry.

Can I make the calzones smaller for appetizers?
Yes! Divide the dough into more portions and use less filling in each. Smaller calzones will generally bake faster, so begin checking earlier.

Can I make these ahead of time?
Yes. You can prepare the cooked chicken, bacon, shredded cheese, and dip ahead of time. For the best crust texture, assemble and bake the calzones shortly before serving.

Can I use a pizza stone instead of a baking sheet?
Yes. A properly preheated pizza stone can help create a crispier bottom crust. Follow the manufacturer’s instructions and use a pizza peel or parchment suitable for the baking temperature to transfer the calzones safely.

Is the Hot Honey Caesar Dip spicy?
It has a little heat, but the sour cream and Caesar dressing help mellow it. You can adjust the amount of hot honey to suit your preference.

What should I serve with Chicken Caesar Salad Mini Calzones?
The simple romaine Caesar salad included in the recipe is a perfect pairing. You could also serve them with roasted vegetables, fresh fruit, or additional dipping sauces.

Instructions

Prepare the Chicken Caesar Mini Calzones

  • Place a pizza stone in the oven, if using, and preheat to 450°F. Alternatively, lightly grease a large baking sheet.
  • Divide the pizza dough into four equal portions. On a lightly floured surface, roll each piece into a circle approximately 6–7 inches wide.
  • On one half of each dough circle, evenly distribute the chopped chicken, shredded mozzarella, Parmesan, and crumbled bacon. Drizzle approximately 1 tablespoon of Caesar Dressing over the filling in each calzone. Leave a ½-inch border around the edges.
  • Fold the empty half of the dough over the filling to create a half-moon shape. Press the edges firmly together, then crimp with a fork or fold the edges over to seal. Cut two or three small slits in the top of each calzone to allow steam to escape.
  • Brush each calzone with beaten egg. In a small bowl, combine the garlic powder, onion powder, oregano, sesame seeds, and Parmesan cheese. Sprinkle the mixture evenly over the tops.
  • Transfer the calzones to the prepared baking sheet or carefully onto the preheated pizza stone. Bake for approximately 12–16 minutes, or until the crust is deeply golden brown and the filling is hot and melted.
  • Remove the calzones from the oven and allow them to rest for approximately 5 minutes before serving.

Prepare the Caesar Salad

  • In a medium bowl, toss the chopped romaine lettuce with Caesar Dressing, freshly grated Parmesan, and croutons until lightly coated.
  • Serve the warm Chicken Caesar Salad Mini Calzones alongside the Caesar salad and optional Hot Honey Caesar Dip.

Optional: Prepare the Hot Honey Caesar Dip

  • In a small mixing bowl, add the sour cream, Caesar Dressing, hot honey, lemon juice, Parmesan cheese, and freshly cracked black pepper.
  • Stir until the ingredients are completely combined and the dip is smooth and creamy.
  • Taste and add additional hot honey for sweetness and heat, or a little more lemon juice for brightness. Add kosher salt only if needed, since the dressing and Parmesan already contain salt.
  • Transfer the dip to a small serving bowl and drizzle with additional hot honey. Serve immediately with the warm calzones, or refrigerate until ready to use.
