Pro Tips

  • Use a wide, heavy bottomed saucepan for best results (although I often use a medium pot as well with great results!), this allows excess liquid to evaporate more efficiently, helping the jam thicken faster and more evenly.
  • Don’t rush the simmering stage. A steady, gentle simmer is key to developing both the texture and that concentrated berry flavor.
  • Stir the mixture occasionally, especially toward the end of cooking. This helps to prevent the sugars from sticking or burning on the bottom of the pan.
  • Remember, the jam thickens significantly as it cools. If it looks slightly loose while hot, it will likely still set up perfectly once cooled.
  • If your jam thickens too much, you can stir in a small splash of warm water or lemon juice to loosen it back up.
  • For a smoother consistency, mash the berries thoroughly while cooking.
  • Taste and adjust at the end. Depending on your berry blend, you may want a touch more lemon juice for brightness or a pinch more salt or sugar for balance.

Can I Substitute?

Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.

  • Frozen berries: Use a mix of fresh berries instead of frozen. Use the same amount, it may just cook slightly faster
  • Granulated sugar: Try swapping with coconut sugar. The flavor and color may change a little.

Dietary Substitutions

  • Refined Sugar Free: Use maple syrup or honey (texture may be softer and less set)
  • Lower Sugar: Reduce sugar slightly, but note the jam may be thinner and less preserved
  • Vegan: Naturally vegan as written

Leftovers and Storage

  • Store your jam in an airtight jar in the refrigerator for up to 2 weeks.
  • For longer storage, freeze in a freezer-safe container for up to 3 months.

But, I Still Have A Few Questions…

Can I use fresh berries instead of frozen?
Yes! Fresh berries work just as well in this recipe. Since they contain slightly less excess moisture than frozen berries, they may cook down a bit faster, so keep an eye on the texture as it simmers.

Why didn’t my jam thicken?
There are a few possible reasons: it may need more time to simmer, the heat may have been too low, or it simply hasn’t cooled enough yet. Jam continues to thicken significantly as it cools, so always allow it to fully set before deciding if it needs more cooking.

Do I need pectin for this recipe?
No, you don’t need any added pectin. The natural pectin found in the berries combined with the acidity from the lemon juice is enough to create a beautifully thick, spreadable jam.

How do I know when the jam is done?
The chilled plate test is the most reliable method. Spoon a small amount onto a cold plate, let it sit for a few seconds, then gently push it. If it wrinkles slightly, it’s ready. If it runs, continue simmering for a few more minutes.

Can I reduce the sugar?
You can reduce the sugar slightly, but keep in mind that sugar plays a key role in both thickening and preservation. Less sugar may result in a thinner consistency and a shorter shelf life.

Can I freeze this jam?
Yes! This jam freezes beautifully. Let it cool completely, then transfer to a freezer-safe container, leaving a little room for expansion. Freeze for up to 3 months and thaw in the refrigerator before using.

How long does it last in the fridge?

Can I make it smoother?
Absolutely. For a smoother, more uniform texture, make sure to mash the berries thoroughly during cooking. You can also use an immersion blender at the very end if you’d like. You can customize the texture exactly to your preference.

Ingredients 

  • 16 oz frozen mixed berries mix of blueberries, strawberries, raspberries, and/or blackberries
  • 1 cup granulated sugar
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • Pinch of salt

Instructions

  • Add frozen berries to a medium saucepan, or pot, over medium-low heat. Cook, stirring occasionally, until thawed and releasing juices (about 5–7 minutes).
  • Stir in the sugar, lemon juice, lemon zest, and a pinch of salt.
  • Bring to a gentle boil, then reduce to a steady simmer. Cook for 15–20 minutes, stirring occasionally, until thickened.
  • Use the back of a spoon, or spatula, to break down the berries to your desired texture.
  • Continue cooking until the jam coats the back of a spoon.
  • Remove from heat and let cool completely (it will thicken further as it cools).
  • Transfer to a jar, finish cooling completely, and refrigerate.
