This Moist Chocolate Chip Loaf is everything right in the world. Once you make it, it will be a recipe that you’ll find yourself baking again and again. Rich, buttery, and incredibly moist, it has the soft, tender crumb of a classic loaf cake with the dense, satisfying texture of a traditional pound cake. Every slice is packed with mini chocolate chips, creating little pockets of melty chocolate from the first bite to the last.
The secret to its incredible texture is sour cream, which keeps the cake moist, while adding a subtle richness without making it heavy. Creaming the butter and sugars until light and fluffy creates a beautiful rise, while a touch of cornstarch helps produce that delicate, velvety crumb.
Whether you’re serving it alongside your morning coffee, packing it into lunchboxes, enjoying it as an afternoon snack, or sneaking a slice for dessert, this chocolate chip loaf cake fits every occasion. It’s simple enough for beginner bakers but delivers bakery worthy results every single time.
Best of all, this recipe comes together with pantry staples and freezes really well, making it perfect for baking ahead whenever a chocolate craving strikes.

Why you’ll love this recipe!

What ingredients do I need?
- Unsalted Butter: Adds rich buttery flavor and creates a tender crumb.
- Granulated Sugar: Sweetens the loaf while helping create a light texture.
- Light Brown Sugar: Adds moisture and a subtle caramel flavor.
- Large Eggs: Provide structure and richness.
- Egg Yolk: Gives the loaf an even softer, richer texture.
- Sour Cream: The secret ingredient for an ultra-moist, tender loaf.
- Whole Milk: Loosens the batter slightly for the perfect consistency.
- Vanilla Bean Paste: Adds warm vanilla flavor along with beautiful vanilla specks.
- Almond Extract (Optional): Enhances the chocolate and vanilla flavors without overpowering them.
- All-Purpose Flour: Provides the structure of the cake.
- Cornstarch: Helps create a softer, finer crumb.
- Baking Powder: Gives the loaf its lift.
- Baking Soda: Works with the sour cream to create a tender texture.
- Salt: Balances the sweetness and enhances flavor.
- Mini Semi-Sweet Chocolate Chips: Evenly distribute throughout every slice for chocolate in every bite.

Recipe Variations
- Fold chopped walnuts or pecans into the batter, or sprinkle on top before baking, for crunch.
- Stir in orange zest for a bright citrus flavor.
- Sprinkle coarse sugar over the top before baking for a crunchy finish.
- Swap half of the mini chocolate chips for larger, chopped chocolate chunks.
- Add a half a teaspoon of espresso powder to the batter to deepen the chocolate flavor.
Pro Tips
- Bring every refrigerated ingredient to room temperature before mixing. This helps create a smooth batter and even bake.
- Cream the butter and sugars for the full 2–3 minutes. This step incorporates air into the batter and creates a lighter, softer crumb.
- Toss the chocolate chips with flour before folding them into the batter to help keep them evenly suspended throughout the loaf.
- Mix the flour into the batter only until no dry streaks remain. Overmixing develops gluten and can make the loaf dense.
- For the prettiest bakery-style loaf, gently run an offset spatula or butter knife down the center before baking.
- Begin checking for doneness around the 55-minute mark. Every oven bakes a little differently.
- Place a sheet of foil on top of the loaf if it starts browning too much before it is done baking.
- Allow the loaf to cool in the pan for 10–15 minutes before transferring it to a cooling rack. Removing it too early can cause it to break.
- For clean slices, let the loaf cool completely before cutting and use serrated knife.

Can I Substitute?
Yes! Like always though, any substitutions made to the recipe can result in a change in texture and/or flavor.
- Sou Cream: Replace with full-fat plain Greek yogurt.
- Vanilla Bean Paste: Vanilla extract can be used instead.
- Almond Extract: Just omit the almond extract if preferred.
- Whole milk: Replace with 2% milk if needed.
- Mini Chocolate Chips: Regular chocolate chips may be used instead of mini chips, though they won’t distribute as evenly. Dark chocolate or milk chocolate chips both work well.
Dietary Substitutions
- Gluten-Free: Use a quality 1:1 gluten-free baking flour for a gluten-free version.
- Dairy-Free: Substitute dairy-free butter, dairy-free sour cream, and plant-based milk for a dairy-free loaf. You can also use dairy-free chocolate chips if needed.
- Nut-Free: Omit the almond extract.

Leftovers and Storage
- Room Temperature: Store the cooled loaf in an airtight container at room temperature for up to 4 days. Keeping it tightly wrapped helps maintain its soft, moist texture.
- Refrigerator: For longer storage, refrigerate the loaf for up to 1 week. Allow slices to come to room temperature before serving for the best flavor and texture.
- Freezer: To freeze, wrap the entire loaf or individual slices tightly in plastic wrap followed by aluminum foil or place them in a freezer-safe container. Freeze for up to 2 months. Thaw overnight at room temperature, or warm individual slices in the microwave for 10–15 seconds for a freshly baked taste.

But, I Still Have A Few Questions…
Why does sour cream make this loaf cake so moist?
Sour cream adds fat and acidity, which creates an incredibly tender crumb while helping the loaf stay moist for several days. It also gives the cake a rich flavor without making it feel heavy.
Can I use regular chocolate chips instead of mini chocolate chips?
Yes. Regular chocolate chips work well, but mini chocolate chips distribute more evenly throughout the batter, giving you chocolate in nearly every bite.
Why should I toss the chocolate chips with flour?
Coating the chocolate chips in a little flour helps prevent them from sinking to the bottom of the loaf while baking.
Do I have to run a knife down the center before baking?
No. The loaf will naturally crack as it bakes, but running a knife down the center encourages a more even, bakery-style split.
Can I leave out the almond extract?
Absolutely. The loaf is delicious with just vanilla. Almond extract simply adds a subtle depth of flavor that complements the chocolate.
Why did my loaf sink in the middle?
This usually happens if the loaf is underbaked, the oven door was opened too early, or too much leavening was added. Bake until a toothpick comes out clean or with just a few moist crumbs.
Can I make this ahead of time?
Yes! In fact, many people find the flavor is even better the next day after the loaf has had time to rest.
Can I freeze this loaf?
Yes. Wrap the entire loaf or individual slices tightly in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 2 months. Thaw overnight at room temperature.
What loaf pan should I use?
This recipe was developed using a standard 8½ x 4½-inch loaf pan. A larger 9 x 5-inch pan can also be used, but the loaf will bake slightly shorter and may finish a few minutes sooner. Light-colored metal loaf pans typically produce the most even baking and the best golden crust.
How do I know when it’s done baking?
Insert a toothpick into the center of the loaf. If it comes out clean or with a few moist crumbs attached (but no wet batter), it’s ready. If the top is browning too quickly before the center is fully baked, loosely tent the loaf with foil for the final 10–15 minutes.
